Cups to grams for baking: why flour and sugar differ.
How many grams are in a cup of flour, sugar or butter, why the answers differ, and how to halve or double a recipe without losing track.

A cup measures how much space something takes, and grams measure how heavy it is. So a cup of flour and a cup of sugar weigh different amounts.
What a cup weighs.
King Arthur Baking's chart gives a cup of all-purpose flour as 120 g, granulated sugar 198 g, packed brown sugar 213 g and milk 227 g, and half a cup of butter as 113 g. The converter uses these, names the source and says about, since a cup scooped tightly holds more.
Say what it is.
Type 3/4 cup flour in grams and it answers about 90 g. Without saying what is in the cup, there is no single answer, and the converter asks.
Halving and doubling.
Choose ½, × 2 or × 3 under the answer and the amount is scaled exactly: half of 3/4 cup is 6 tablespoons. Cups and spoons are given as measures you can scoop.
